One of the biggest challenges for my family when we totally cut gluten, dairy and eggs from our diet was figuring out how to make waffles – our favourite breakfast food. After much trial and error I finally created the best gluten free, dairy free and egg free waffles. Enjoy!

Banana Coconut waffles – Gluten free, dairy free and egg free 

1 riped banana’s
1 1/3 cup gluten free flour
1 cup shredded, unsweetened coconut
1 teaspoon baking powder
1 tablespoon vanilla extract
1 1/2 cup coconut milk beverage
2 tablespoons olive oil

  1. mush the banana’s in a large mixing bowl
  2.  add all other ingredients and mix thoroughly
  3. Using a waffle iron is the easiest way to get an evenly cooked waffle. I prefer the Calphalon no peek waffle maker
