Pulled Pork Sandwich

I love pulled pork! It’s easy to make, super delicious and offers leftovers for days.

I cook a big batch of pulled pork and use it for lots of different meals – sandwiches, tacos, in a hash, or just serve it with fresh veggies.

Lots of pulled pork recipes have bbq sauce or ketchup in them, and lots of sugar. I want to cook wholesome food that doesn’t include sugar. I found a few recipes online for pulled pork without sugar, but none that I loved. So, I made my own.

Savoury Pulled Pork with no Sugar

3 lb boneless pork shoulder

Pork Rub
1 tbsp salt
1 tbsp Chili powder
1 tsp black pepper
2 tsp paprika
1 tsp cumin
1 tsp cinnamon

Liquid for cooking
1/2 cup chicken stock
1/3 cup apple cider vinegar
1/4 tin diced tomatoes with some liquid
4 cloves of garlic, minced
2 tablespoons maple syrup

Cooking Instructions:

1. Mix all rub ingredients together in a small bowl and rub over the 3 lb pork shoulder.

2. Combine all liquid ingredients in an instant pot or a slow cooker

3. Place the pork in the instant pot or slow cooker. For instant pot cook on high for about 55 minutes, for a slow cooker cook on low for about 8 hours.
