I put this dish together for dinner tonight. It is quick and super yummy, as well as easy on the waist line. It serves two.

Chicken Apple Pan Fry

3 large chicken breast
2 large, organic apples, diced
2 tblspoon coconut oil (melted)
1 tspoon cinnamon
salt and pepper to taste

Place chicken breast in baking pan, coat with 1 tablespoon of coconut oil, salt and pepper. Place in oven at 350 degrees for 20 minutes. Once cooked thoroughly, cut the chicken up in bite sized pieces and place aside.

Dice apple into bite sized chunks. Mix 1 tablespoon of coconut oil and cinnamon. Place apples and chicken in frying pan and cook until apples are soft.
