I love making soup after the holidays! There are so many great leftover ingredients to choose from, and you can make your soup with homemade bone broth  – which is crazy healthy as it is full of important amino acids, fats and probiotics.

Here’s a great soup I made tonight using leftover ham, potato and peas.

Ingredients

4 cups homemade chicken/turkey bone broth
2 cups ham, chopped into bite size pieces
3 russet potatoes, peeled and chopped
1 onion, diced
2 apples, cored and diced
2 cups frozen peas
1 tablespoon fresh thyme
1 teaspoon allspice
1 teaspoon cinnamon
salt and pepper to taste

Instructions

1. Bring broth to boil and add 2/3 of the potatoes, let cook until soft
2. Add the onion, apple and spice, let simmer for a couple of minutes, until the apple is soft
3. Put the soup into a food processor and process until smooth
4. Place back on stove and add the rest of the potatoes, cook until they are soft
5. Add the ham and peas, cook for another couple of minutes
6. Serve hot
