As busy moms we know having a healthy breakfast that we can grab quickly is key to our health goal success. That is why I LOVE this quinoa breakfast jar. It gives me four breakfasts and takes about 5 minutes to prep as long as I have cooked quinoa on hand. And it is delicous!

Makes four (½ cup) servings in one jar

Ingredients

2 cups cooked quinoa
1 cup unsweetened almond, coconut or rice milk
½ cup plain coconut yogurt
2 tbsp chia seeds
4 tbsp natural peanut butter (make sure no sugar has been added)
1 tsp (per serving) maple syrup

Instructions

  • Place all ingredients except for the maple syrup in a bowl and mix thoroughly. You can melt the peanut butter a little if it is thick.
  • Place mixture in a jar and refrigerate for at least 4 hours or overnight
  • When you serve a ½ cup serving add 1 tsp of maple syrup and mix well
  • You can also add fruit on top if you like
