Here is a recipe that a friend of mine shared with me. She took it from the Fit Paleo Mom Blog. Whether you practice the Paleo diet or not you will love this recipe; for breakfast, as a side dish or just as a snack.
Sweet Potato Biscuits
4 small sweet potatoes, cooked, peeled and mashed
1/2 cup coconut oil
4 tablespoons (or until doughy) coconut flour (I used almond flour because I had it available)
1 teaspoon baking powder
1 garlic clove, mashed
1/4 cup chives
1/2 cup bacon, chopped into small pieces
salt and pepper to taste
Preheat oven to 375 degrees.
Add all ingredients together, spoon onto a baking dish and bake for 22 – 25 minutes.
If you are looking for a healthy, sugar free desert, omit the chives, bacon, salt and pepper. Then you have a sweet treat.
