Well, I may be a bit early. It’s only April. But the sun is shining, the snow is melted, and I am ready for long sunny days at the beach.
And what screams summer better than popsicles, ice cream and sweet, cold treats. The challenge us health conscious folks have is all of these wonderful summer treats have a huge amount of sugar added in. Like a HUGE amount.
My kids favourite popsicles, Lifesavers popsicles, have 10g of sugar per popsicle!
So, I decided that we would start making our own popsicles, sans the sugar. It’s a bit more work, but way healthier, and the kids have so much fun making them.
Below is one of our favourite recipes. The popsicles are made from real fruit berries, coconut cream (ya healthy fat!) and honey.
Here’s the recipe – Enjoy!!
1 cup fresh or frozen berries
2/3 cup plain greek yogurt
2/3 cup coconut cream
2 tbsp melted honey
- Mash the berries and honey together
- Add the coconut cream and yogurt together, blending fully
- Stir the berries, honey , coconut cream and yogurt together
- Pour into popsicle tray or ice cube tray
- Freeze overnight
